Sri Lankans’ staple food is rice and curry, frequently eaten with a bowl of dahl and fried vegetables. There is infinite variety to the types of curry sauce – thick or thin, mild or fiery – so there is plenty of room to explore.

The herbs and spices used in the curry sauces include caraway and cardamom, cloves and garlic, mustard seeds and chilli, and each cook has their own special combination.
